Cheese is about more than just taste. Some parameters are even controversial: What should be classified as cheese? How does cheese influence culture? And can we live without cheese? To answer these questions, students in the Food & Design department are investigating the potential of the circular economy in cheese production, possible plant-based alternatives, and a future without cow’s milk.
