The interactive roundtable discussion EAT YOUR WASTE takes a fresh look at circular food design.

Armin Winter (University of Natural Resources and Life Sciences, Vienna), Michael Neuman (Kitocoat), Michael Moser (Cucina Alchimia), Alexandra Brückner (VIENNA DESIGN WEEK), and Christine Bertl (Circular Economy Forum Austria) discuss systemic synergies and transdisciplinary networks. Only through close, cross-sector collaboration is it possible to unlock unused biological resources and make them sustainably accessible. Using the example of a washable and edible protective coating for food, the event will demonstrate how individual roles and areas of expertise interlock to pave the way from an unused resource to a circular product – with visitors having the opportunity to test the coatings themselves on-site and actively participate in the discussion. The roundtable will be conducted in English and will be recorded.
